Arghh my own room a warm bath and I am already feeling a million miles away from the Camino.
Unfortunately my body clock still has me up at 5:30am!
Today I am the Guest Chef at Inmas cooking school - 6 of her friends who get together every other weekend and cook together. I was asked to do it and jumped at the chance as I am very fond of cooking.
On today's Menu we will be cooking Tuna Pasta Bake and a Peanut Butter Hummus - these will Ofcourse have a few of my special modifications to boost the flavor!
So first thing we did was head to the supermarket and gather all the supplies. Amazingly the total price came to about €3 per person and there was a lot of leftovers.
At about 1:30am Inmas girlfriends started to arrive but it wasn't until about 3pm we started:
First up Peanut Butter Hummus
2 x 400g cans of chickpeas
1/2 cup of chickpea water
6 x TBSP lemon juice
6 x TBSP peanut Butter
4 x TBSP Olive Oil
1/2 Tsp Salt
2 x Cloves of garlic
Basically add all ingredients to a food processor adding water (hot) very slowly making sure to leave as thick paste. Adding salt, lemon juice and peanut butter depending on your own personal preferences.
We served with:
1/2 kg of carrots sliced thinly
1 Bunch of celery chopped
Toastadillas - small toasted pieces bread
The Hummus was a huge success and just what we needed as it was now around 4pm and we hadn't even begun to start the main dish!
The Main Dish
Tuna Pasta Bake with homemade creamy sauce
700g rectangular pasta
800g of tuna
600g of sweet corn
Fresh Parsley
4 x large brown onions
200g x bacon pieces
400g of cheddar cheese
1 jar cheese salsa
100g of flour
100g of butter
1.2L of milk
6 cloves of garlic
Preheat Oven 180 degrees
Boil your pasta (undercook it as it will later go in oven)
Chop onion up into small pieces and brown in fry pan with few cloves of garlic!
Slightly fry bacon pieces
Sauce: on low heat melt butter, slowly mix in flour till mixture darkens, now slowly add milk. Remove from heat and mix in 3/4 of cheese. Now add salsa, bacon, onions, corn, chopped parsley and salt and pepper to taste.
Lay Tuna and some oil at base of casserole dish and then layer your pasta on top. Next pour sauce over and coat with remaining cheese. Put in oven for 20 minutes or until goes golden brown.
It was now 5pm and everyone was starving so we let cool for 30 minutes and one of the girls made up a round of margaritas and we toasted a successful cooking class. The Pasta bake was a huge success and everyone went back for seconds. We sat around chatting for the rest of the afternoon and actually some of the evening too. The reason I love Spain so much is because of the social side of Spanish culture: meeting for a meal means half a day of chatting socializing and just being with people.
Once again I am truly blessed that I met Inma 1 year ago and now I am able to be here visiting her!
