Ok so I keep making these roasted apples in the microwave and it's one of my greatest food inventions (even better than butter in the oatmeal and yogurt combined!) Basically, you microwave a sliced apple (I like to use an apple that is a little tart) for 2 minutes with about 2 tablespoons of water. Drain the water. In another bowl, mix 2 tablespoons melted butter, 2 tablespoons sugar, one teaspoon brown sugar, half a teaspoon cinnamon, and a packet of original oatmeal (you could use about 3 tablespoons of regular oatmeal as well). Spread the mixture over your cooked apples and pop it back in the microwave for another minute. The apples will come out hot and soft but not too soft while the topping will be the right consistency! Hope someone tries this because it's really easy and amazing.
Hmm in other news, I worked on that paper some more. Had a tutor that I work with back home check out an outline/proposal that I'm turning in tomorrow and he said it looked good. Let's hope my teacher thinks so. I need to attend the rest of the lectures to actually understand which ideologies he wants us to use so there isn't a whole lot of research I can do. I could have written it this weekend if I already knew. But I guess that's why I'm taking the class, right? Haha.
I let the University use my room for their open day so I'm getting a £50 gift voucher for Amazon.com. Bad side of that deal is that I had to wake up early on a Saturday and occupy myself. I went to the DMU library (which is 24 hours!!!!) for a while, got a head start on a project and things together for Ireland. Then I went to the public library and got 7 books out. I should not be allowed to go to libraries, haha. I'm really happy because I'm finally reading Middlesex by Jeffery Eugenides. It's a really really good book.
Heard about about voice lessons and I decided I'm not going to waste money on them. I'm going to save it for trips. Seriously, these 2 months are going to speed past me with the amount I want to do in them. I'm excited to actually start feeling productive again. I'm so used to working or going to school that not really having anything to do was killing me.
Going home should be interesting. I'm supposed to be working over winter break in the Office for Academic and Preprofessional Advising and I need to decide if I want to work for Admissions over the summer again. I need to apply in January. I also need to think about a job offer in Baltimore city to sing 2-3 times a week for $90. The pay is good and it'll give me a new venue for singing but I'll be taking vocal arts ensemble and voice lessons in the spring. With the internship and crew, I don't think I could stand late night vocal practices and the drive. I know I may be closing my only door into the musical world but if it's meant to be later on, it will happen. My teacher wants me to focus on solo work anyway so manipulating my voice into choir mode may set me back.
Well, it's time to make homemade, stovetop, mac n' cheese with broccoli and cauliflower. I have never done this before so hopefully it will turn out delicious.
