Long Weeekend! Today is the start of the long weekend here in Mexico and both Ena and her Father have gone out of town to be with family. I didn't sleep so well so decided to sleep-in a bit. When I woke up Ena's Mum was gone but there was a fresh glass of carrot juice waiting for me on the table and some of my favorite Mexican corn drink Pazol on the stove top. Feeling energized after my veggie juice I made my way to the big Park (Espana) to use the outdoor gym equipment. There were lots of people about exercising, walking their dogs and spending time with their families. I think going to the park (specially on the weekends) has become my favorite thing whilst travelling - cities make me anxious but parks offer solace. I did my gym workout and then made my way over to the lake to sit and do some writing. Taking a bit of a different direction back to the house I got a little lost but ended up seeing some pretty cool sculptures and nice looking cafes. For lunch today Ena's Mum made the most delicious Emoladas: Chicken Mole (Puebla style) all wrapped up in tortillas and then covered in more mole salsa - the salsa was a little spicy but perfectly complimented by a light radish, onion and lettuce salad. The Emoladas were surely one of the best things I have eaten in Mexico yet and I need not even leave the house to sample Mexican cuisine at its finest. Watching Ena's Mother cook and how she prepares food has taught me a lot that I hopefully can take onboard and incorporate into my own life. The sun was back out in the afternoon so I went for a big walk and back to the skatepark. There were a lot more skaters today and I enjoyed watching and reminiscing about my days of skating - made me wonder if I was still capable of skating!!?? In the evening Miguel went out so I had offered to cook for Ena's Mother. I made an omelette with fresh cilantro, onion, capsicum and shredded chicken alongside a garden salad; it turned out quiet well and I think Ena's Mum enjoyed it.
