I woke up this morning to another beautiful sunrise to find trish had been awake for at least a couple hours already. I guess she is still adjusting to the time change.
At breakfast I decided to be adventurous and go with a traditional Thai breakfast rather than my normal eggs florentine, with hollandaise on the side, which is what I have gotten the last two mornings in a row. I went with a Thai omelette, with shrimp, chives, soy sauce and this delicious chili sauce, which trish and I both decided we want with every meal. Oh yeah and of course sticky rice, which is served with every meal. Even though shrimp in an omelette sounds a little weird, it was very good. To imagine the flavor profile, think of shrimp fried rice, add more egg and take out the fried rice. Every morning at breakfast I look forward to the fresh juice. There is always orange juice, and then another special for the day. Today's choice was mango and passion fruit juice. Sweet and refreshing.
As part of the fiftieth anniversary of the four seasons, they're promoting agriculture and the ecosystems of the countries they inhabit. Coconuts are the largest form of agriculture in Koh Samui and they're asking guests to volunteer to promote agriculture on the island by planting coconut trees to boost and encourage the economy here. We planted two coconut trees today. We found out today Tania means coconut in Thai.
After breakfast we relaxed in the villa and then went down to the beach for the day. I think trish already covered yesterday's off campus activities...so were staying at the resort today. I should also add that I got some serious sun burn on my scalp yesterday.
It's really hard to justify leaving here. They do such a good job of bringing all your senses to life. From the tastes to the smells everything seems so vibrant.
There always seems to be a certain smell in the air and after trish investigated today we realize it's lemon grass and kaffir lime. The locals have told us they use both to cook and scent everything. It's so fragrant and relaxing.
We spent the day in the beach, in and out of the water and under the shade. I got another shoulder and head massage on the beach, but this was not a great idea considering the scalp burn. The girls from the spa just visit mid day to offer complimentary shoulder rubs on the beach. It's quite the brilliant idea.
At around 230, the skies opened up and it started pouring. Our first rain since we got here! The kind of rain you think of when you think of this region of the world. Lucky for trish, they were hosting a manicure and martini party at beach bar so we had a cocktail and watched the tropical downpour while trish got a manicure. Since it didn't seem to be stopping we made spa appointments and headed up for another massage. So relaxing and again the smells of lemon grass, lotus flower, and lime were everywhere. By the time we finished, the skies were blue again.
Tonight were off to pla pla (fish fish) for dinner down at the beach. But first a Cuban up on the hill restaurant for sunset and sundowners.
