OMG have been experimenting with my oven and Weber BBQ. Have made a chocolate cake, roast veggies and beef in the van and tonight excelled with a sticky pork salad with roast pumpkin, beetroot and feta. I think this cooking on the road could be be amazing and should post on a travel show. So much better than the boys on those travel shows can do..... Go me. I mixed up some brown sugar and Kraft balsamic salad dressing and poured it on the pork loin and wrapped in foil. Then diced up fresh beetroot and pumpkin and roasted it all in the Weber. Took about 20 mins. There was a slight hole in the foil so the sticky pork goodness coated all the veggies for an amazing flavour. I then put a bed of cos lettuce, sliced the pork loin added the pumpkin, beetroot , mandarin segments , feta cheese and Changa noodles and dressed withe the balsamic dressing. To die for. A must do.
