Food is one of my passions. I have been looking forward to taking cooking classes in Thailand for a long time. Bangkok has several schools, and I chose one close to Kho San road. Its a family business, run by a nice young man. Since I was the only one who signed up for a class that day, I got a private session. We went to the market together and he showed me all the ingredients used for the dishes we were to make that day. I was to prepare and eat eight dishes - very ambitious plan :) We went to the school, a small shop with individual cooking stations, very informal open kitchen. It was nice to be able to do everything and not have to wait for my turn because it was just me. I prepared green curry, tom yom soup, pad Thai, spring rolls, masaman curry, and chicken with cashews (and a few other dishes). At the end, i had to
bring the last dish home, because I couldn't quite simply fit it all in. The dishes were very tasty, and for the first time I could actually enjoy the curry because we only used one chilli pepper for the curry paste, instead of 5-10 chillies the locals normally use, and it made a huge deference for me. Plus, the ingredients were so fresh. I'm looking forward to more classes in the Northern Thailand. Each region has its own specialty. What amazes me about Thailand is how you can find great food everywhere on the streets, and without a real kitchen, they cook amazing things. This really is the land of food, and the best is found on the streets.
