Baijiu- (Bai-Jiu) Directly translated to White (Bai) Alcohol (Jiu) or white-spirit. This drink taste of pure death and sits somewhere between vodka and engine cleaning fluid. Cheap versions are favourless and never mixed with anything this type of Baijiu is popular among construction workers and the homeless. Anything over 80RMB a bottle is said to be nice however I do not have this much money so it's 15RMB for 2 litres for me.
I took up this quest when it became apparent that the only ready available spirit is Baijiu, it's cheap and it's disgusting so I set out to find a way to make it enjoyable. I searched on the internet for any cocktails that include this beast and I soon ran into 'The paint Stripper' one part Baijiu two parts Paint remover served in a used paint pot (with a wash of 'Dulux' duck-egg of course). Now I don't plan on drinking this anytime soon but, there has to be a better way? So I looked to the bastion of knowledge that is Reddit and soon stumbled upon a nice fellow who gave me the idea to infuse it. So I grabbed some fruit and pots and started the process. I currently have 5 'brewing' in small jars and I will try them each day to see how they are getting along. Perhaps I am stumbling into a great discovery or perhaps I will end up poisoning myself. Thornton Hi, I have been experimenting with baijiu for the last three months or so. Its a bit too strong and pungent for my palate. I have found it really is great as a cocktail mixer some brands more so than others.
