Leftover special !
Used some of the curry lentils from last night, mixed in the pea and tomato salad from yesterday and steamed some rice with curry and scotch bonnet peppers. Then I used this filling for some corn empanadas.
I didn't quite have enough Maiz flour so added normal white flour. It was okay but the pure Maiz works better. The filling was nice and spicy so tasted really great. I also added more curry powder to the Maiz flour.
We had some blackberry rum to wash it down with.
Really easy if there are only two of you as the corn empanadas are very forgiving (when I overestimated the amount of filling and the pastry didn't cover it I just patched on some more!)
