I have no idea how I got so lucky to meet Christina three and a half years ago in New Zealand, but I did. And now I've spent the last day and a half laughing and eating and laughing some more.
Christina met me at the Copenhagen airport yesterday afternoon and we started driving south. We paused briefly to pick up some groceries (not gonna lie, it was mostly candy) and then we kept heading south to a resort type village just outside of Præsto. Gorgeous countryside dotted with little cottage summer homes. Here I was reunited with Lasse and I was also able to give everyone extra hugs because.... I found out one of my favourite couples just got engaged the day before!!! Aw ya!!!
I also met their fab doggie Roxy. I've been told she's a bit standoffish, but I got a snout 'smile' out of her and even a quick kiss immediately. Apparently, I'm special.
We were quickly making dinner. the wine was poured and all was right with the universe. We also took Roxy for a walk down to the beach 1 km away and then back for more wine along with evening chips and dip. I mean seriously, perfection. I lasted until about 9 pm, for which I was very proud, because at that point I had been up for about 40 hours straight.
13 glorious hours later, I got up. It was awesome. We ate breakfast on the terrace and drank coffee and chatted all afternoon. Then around 5 we finally decided to head out for a field trip and headed down to Møns Klint, an incredible set of chalk-made cliffs on the coast. It's 492 steps down to the water, where the beach is made of large dark granite type stones with a small sulphur spring waterfall. Just breathtaking. Even more breathtaking was the hike back up the 492 stairs, but I managed to survive. Then a walk in the forest with Roxy and we picked up some pizza on the way home.
Feeding a vegetarian is very confusing for steak and bacon lovers Christina and Lasse, but they are doing wonderfully. And they've also agreed to let me make them tofu one night. I'm looking forward to that. It seems like the least I can do for the newly engaged couple. Augh, I love these two people so much!!!
Now here's hoping I can sleep with all the Danish chocolate pumping through my bloodstream.....
