Day 9 in the Congo:
Today is my last day in the Congo. I stayed in the Cosmos Hotel last night because, it is very close to the airport and didn't cost much. It was a decent hotel. It was probably a two star. My time here was very good and educational. I learned a lot about the Congolese government, economy, language, and holidays. One thing I didn't really talk about though was the food. Most of the meats they eat are goat and chicken, because most people do not have electricity or refrigeration. Because they do not have refrigeration they tend to eat smaller animals so, that they may not have leftovers that will spoil. One of my favorite dishes though was the fruit fritter. It was so crunchy and delicious I had to get the recipe.
·Although enjoyed the Congo I missed my friends and family in America. I reached the United States that afternoon. I was really tired so I went to bed for a well needed rest.
·1 cup sifted flour
·1 teaspoon baking powder
·1 tablespoon sugar
·1/2 teaspoon salt
·2 eggs, separated
·1/2 cup milk
·vegetable oil for deep frying
·banana chunks, peach slices, apples chunks, or fresh berries of your choice
·powdered sugar or cinnamon sugar
