With a quick Skype call from his parents, we got the golden ticket recipe. But how would it hold up to rice and ONLY rice flour?
Surprisingly, very well.
Gluten Free Crepes
You will need:
Ingredients on the golden ticket
Large bowl
Non stick large skillet (the lower the lip around it, the better)
Large ladle
Non stick spatula
Little oil or butter
*Toppings
1. Mix ingredients in large bowl, making sure all flour clumps are out
2. Heat a skillet on medium heat and put just 1tbsp or less of oil or butter on the skillet and wait until it melts/bubbles
2. Scoop the batter with the ladle (around 1/4 cup) and pour evenly in the skillet. You may need to swivel your skillet so it creates a thin circular layer.
3. Wait a minute or two until the batter starts to bubble
4. Use your spatula to lift the outer edges of the circle to make sure the batter has set and is not stuck to your pan.
Now for the 5th step, if you are a confident crepe Frenchman, go for the utensil-less flip. Make sure the bottom of the crepe is not stuck at all to the pan by using the spatula to move it around. Directly in front of you, with a forward/backward motion, get ready for liftoff and use enough forward force to let gravity do its thang and flip the b****** over.
OR
If you're a little more timid in the kitchen, use your spatula and maybe even a little help from your other hand to flip it in your own creative way. I usually opt for this option, but sometimes I'm feeling good, like the photo shows.
6. Let the other side sit for a minute, maybe lift an edge with your spatula to peek at its progress, and once it's set you are done.
Word of advice from the Frenchman: don't be discouraged by your first and second crepe. They never turn out super well, they are just warm-ups. But that doesn't mean they still don't taste delicious....
7.Put them somewhere warm and continue to have a crepe-a-thon until the batter is done (or save the batter for later in the fridge!)
You'll probably need to add butter or oil every third or four crepe made, and after the fifth it's best to get all the excess crepe gunk off your spatula to make it squeaky clean.
