Adam and Charlotte's Great Escape.
Well as you can see from the photo we have been on a Thai Cooking course. It was actually a really good day and we met some really nice people. There were 8 of us and the day began with a trip to the market to learn about the ingredients and to purchese the fresh ingredients to cook with. On arriving back from our shopping trip we sampled Thai fruits, sticky rice and coconut and tried a traditional thai welcome snack. The snack was made up of nuts, chillies, dried coconut, driped shrimp, ginger and lime amongst other things that you put into a folded leaf and spooned a sweet sauce onto and shoved it into your mouth. Then we cooked glass noddles for our spicy chicken noddle salad which we later made the dressing for and eat for lunch. This was quite hot and spicy. The second dish we prepared and cooked by ourselves was chicken and cashew nuts, Adam managed to burn his garlic and had to throw it away and start again, but after this moment of error it all came together and was very tastey. The next dish was coconut milk chicken soup again we prepared the fresh ingredients by chopping and crushing and added them to the coconut milk. What you find with all these dishes is you add fish sauce and sugar, and it was a case of tasting and then adding more as you went.
Much of the afternoon was spent making a red thai curry paste by chopping and grinding with a pesel and morter until the paste was formed. This was used to make Thai fish cakes and a red thai curry with chicken. Adam wants you all to know that he had an 'excellant' for his fish cakes and his red curry, he enjoyed the chicken with cashew nuts the best and also the fish cakes and red curry was scummy. I on the the otherhand couldnt I glad I tried everything and gave everything a go but didnt find anything tickled my tastebuds that much.
We are leaving Chiang Mai tomorrow evening and risking the VIP bus back even though we have read in the Lonely Planet that on rare occasions people get gassed and their belongings stolen!!
