Thursday was another typical Swedish day with a LOT of rain! Jessie & I had a moleing day (as Jan-Louise would call it :P) & hung around at her apartment resting up for the coming weekend's festivities. We baked a delicious batch of Anzac biscuits (cookies, Jessie calls them) to take with us to the family we were going to stay with for Midsommar as a thank you for having us. I made them with Jessie for Australia day when she visited Perth earlier this year & she absolutely loved them. We made sure to taste test the biscuits (several, actually) to ensure they were of the highest quality ;)

Jessie made yet another incredible meal for lunch - a beautiful mushroom soup made with dried chanterelles, a fancy kind of mushroom that she picked near her Mum's summerhouse. I made a quick dash down to the local store to get some fresh bread & felt like a true local in my borrowed gumboots & rain jacket! Hehe Fingers crossed the rain will be all rained out by the time we leave for Midsommar…
