So I've packed my bags and said a very sad goodbye to John at the airport.I really didn't want to leave but I have to keep going so that I can return again. This time it is off to Denmark for my Uncle Orla's 75th birthday. He is not expecting me so hopefully it will be a surprise.Another 10,000 km with Singapore Airlines.
I arrived in Copenhagen at 8 in the morning to about a foot of snow on the ground and went to spend a few hours with Anni, Mom's friend for years ago.We had a lovely "Danish" lunch and caught up on all that has been happening with her kids and grand kids.Unfortunately I think this will be my last visit to Denmark before heading for Canada.Thank you Anni for a wonderful visit.
Off to Billund at 7 in the evening and Eric picked me up with warm clothes to bundle up in. I rang the bell at my Aunt and Uncles and sure enough he had no idea I was coming. The photo does not do his surprise justice.I wish John could have been here to experience all the fun we had over the next few days.
Early on Saturday morning (Feb 27) we started to set up for breakfast.30 people were expected.Orla didn't know how many people were going to be there. The kids (10 of them) arrived at 9 AM to sing Happy Birthday and then everyone sat down to breakfast with buns, cold cuts, cheese, fruit and finally layer cake.Of course everyone has to have a tipple of Dr Nielsen Bitter with his or her coffee.Dad will have to confirm if in fact this Dr. Nielsen was the doctor at the school, which the Pedersen kids attended so many years ago.So Dad is it true?
We cleared up breakfast at about 1 in the afternoon and then started to get ready for dinner with the family and the neighbours from next door.Birthe made an amazing beef tenderloin baked in a salt dough that was so tender we just about didn't need to use a knife. We had a wonder evening.I hope Orla had a birthday he will not forget.
We are all going to Eric's for dinner on Sunday night Feb 28 to watch Canada vs. US for the gold medal in the Olympics.Go Canada Go.When we arrived at Eric's house Mona and Tasja were there dressed up for the occasion.Thai food for dinner and then the TV was primed and ready to go.The neighbours must have wondered what was going on.After each goal we were cheering and jumping around like crazy people. With 24 second to go in the 3rd period the US scored the tying goal that was enough to quiet us down a bit.But Sid the Kid (Sidney Crosby) had us all going crazy in the 8h minute of overtime when he won Canada the GOLD medal.Eric had champagne on ice and the cork was popped to the sound of O Canada. We will not forget that night. What a high for Vancouver to end the Olympics on.
I'm off to Spain on March 2nd and will be going to see Granada. Then back to my old apartment in Benicassim for a few days before heading towards England late to March.
I miss you all and look forward to seeing most of you soon.Hard to believe I have been on the road for 8 months nearly.Only a couple more months before I land back in Canada.
Take care of yourselves.
Love Tove
