OMG this is soooo super deliciousiocity!
So Florence, our guide and wife of one of the village leaders, had made this for us in Touna Aute and was even nice enough to give me the recipe. enjoy this super sweet and yummy dessert!
1 coconut dry
1 pound of brown or cane sugar (you can use less if this is too sweet...i think 3/4 pound would be better.)
1/2 cup of water
2 tablespoons of grated fresh ginger.
First grate coconut.
then mix water, coconut and sugar on a medium flame and keep stirring and let it come to a boil.
then add grated ginger to taste.
keep boiling and stirring.
when the cocount is transparent, it means it's done
cook for a few minutes until its a sticky mixture.
leave it on a low fire and take out spoonfuls and place them in little cupcake cups or on a greased sheet until it dries.
