A Vintage Caravan, 2 Kids and a LOT of Courage!!!
4 Ingredient Chicken
This recipe was inspired by the new AWW Just 4 book... great caravanning/campfire meal.
4 Chicken breasts
300gr Brie, thinly sliced
400gr Baby Spinach Leaves
Cranberry Sauce for topping
Slice pockets into chicken breast and insert slices of brie. Secure with toothpicks.
Heat olive oil in fry pan. Sautee baby spinach until just wilted. Season with salt & pepper, put aside into aluminium foil tin tray.
Cook chicken in same pan used for spinach, using a lid or tin foil. Remove from heat, cover in tin foil to continue cooking.
Plate up spinach, Place chicken over spinach, dollop with cranberry sauce, serve with crusty bread.
