Today Christelle and I learnt how to cook Thai food at "The Best Thai Cookery School" and have eaten enough food to last us the week. It was a days cooking course where we were first taken to a market and taught all about picking the right food (e.g. that small chicken eggs are better than large in supermarkets as the larger are older hens and don't taste as good). We then went to the school which was Permpoon Nabnians home. He let us hand pick fresh vegetables, herbs etc from his garden and then used them to teach us how to cook: spring rolls, coconut milk & chicken soup, chicken with cashew nuts and onions, Red chicken curry, mussaman curry, pad Thai, egg fried rice, papaya salad and sweet sticky rice with mango. Now with two very full tummys we are about to go to Pai, a 3 hr bus journey north of where we are now at the top of Thailand and will hopefully sleep the whole way there!
