During our first week in Vietnam, we went on a cooking class. The day began with a trip to the bustling market of Hoi An where we were going to buy all of our ingredients. As we strolled into the market, pungent smells penetrated my nostrils from the stall which was selling chicken feet and eels, making me feel sick. First of all, we bought some herbs: green onion, lettuce, mint and coriander. Next, we bought some shrimp, beef and pork before going on a boat journey to Coconut Island where we would cook our food.
The first dish we made was spring rolls, which was a concoction of: shrimp, pork, carrot, lettuce, spring onion and bean sprouts. This was really delicious.
After that, we made a crispy fried pancake and at one point we had to flip the pancake. Instead of it landing in the pan it landed on the table and my mum quickly picked it up before anyone noticed which I found amusing! When I bit into the pancake, there was an explosion of flavour from all the ingredients.
My favourite dish we made was southern style beef vermicelli (Bun Bo Nam Bo). At one point, when we were cooking the beef, we would tip the beef and oil to the edge of the pan and it would set on fire and my mum had a bit of a panic when it happened!
I really like the Vietnamese style of cooking and will be sad to leave Vietnam.
