Last night our host treated us to a traditional Faroese dinner. This photo was the first course appetizers. Here's the full menu...
The menu will be this:
First course:
Dried dried fish, dried whale, blubber and cold potatoes
Drýlur (unleavened bread) with skerpikjøt (dried lamb)
Main course:
Ræst (half dry) fish with potatoes, carrots and a gravy with good tallow
Fried monkfish with fresh pasta, vegetables and a gravy
Dessert:
Rhubarb dessert with cream
This was a very special event. There are thoughts related to whales, but the Faroese perspective is important to understand. Like the Inuit, the Faroese have for centuries lived off what was available, mostly protein from the sea and land. Very difficult to farm or raise anything except rhubarb. I read an interesting article about the unique dietary issues of Faroese, where their genetics are tuned to protein. There have been cases of Faroese getting terribly ill because of carbohydrates. I think the genetic disorder is called Glycogen Storage Disease. Google it. Fascinating. I think there are other names.
The food was very rich because it was so concentrated in both composition and flavor.
One of the guests went fishing that day, so some of his catch was cooked up.
It was really interesting listening to Durita talk about whale harvesting. Truly a community event where the whole community shares the bounty based upon participation. Reminds me of buffalo hunts.
