Red curry made by me :)
Bursting with excitement.
So much fun in the kitchen. Learnt loads. Delicious curry too. I'll make it when I get back.
Also served with garlic fried rice.
Recipe: Red curry for 4
The curry paste:
Lemon grass .... 5 table spoons
Garlic... 10 cloves
Chilli small red ... 10
Galangal julienned... 1 tablespoon
Lime zest .... 1 teaspoon
Tamarind ... 6 (10 cent sized) pieces
Black peppercorns ... 6
All approx :) island style.
Wok Cook with
150 mls oil.
1 teaspoon shrimp paste
for Half hour.
Until paste joins and oil separates.
Store in fridge for 4/5 weeks
For the curry dish for 1 portion
add one table spoon curry paste per person to smoking hot wok
Oyster sauce ... 1 teaspoon
Fish sauce ... 1 teaspoon
Sugar... Half teaspoon
Two kaffir lime leaves
Water... 100 mls approx
Green beans etc (whatever you want)
unsweetened milk ... 3/4 table spoons
Cook paste for one min
Add oyster fish sugar lime
Add more water if required
Green curry... The paste is v like red curry just coriander seeds and root and cumin seeds in the paste. Also basil in the curry. Of course no tamarind or red chilli :)
Garlic rice is just butter garlic mix and add cooked steamed rice.
