Spring rolls. Can't resist. Dipped in egg before frying. They just use whatever vegetables they have in Laos as all slightly different. These ones had broccoli carrots. Sauce was a slightly spicy limey coriander taste.

Starving. Only ate a half a croissant between us all day. Bus journeys not fun when not feeling well :) Arrived in our Eco lodge by the river. Noy cooked us delicious fried rice with vegetables and chicken and mixed vegetables and garlic. The fried rice here always seems to have carrot garlic mild soy bok Choy of some sort too. Mild light flavoured Laos rice.

No real food today mostly water. But this is our home. V sad to be leaving it. But excited about Luang Namtha adventures.

At the falls we had this rice with our fish. Just freshly made egg and vegetable fried rice. In Laos things are much milder than in china and this dish has a light scallion and soy sauce taste.

Having just said that the food makes us ill we do keep trying :) At the tad sai waterfalls. Delicious steamed river fish with lemongrass chilli and scallions kaffir lime leaves. It's really simply and fragrant. A definite try at home. So easy. They have fresh lemongrass here. So a handy tip for our dried stuff is to pop the stems in a glass of water. After a few days they will form fresh shoots.
