Nomas new Bolivian venture in La Paz, Gustu.
Unusually they served two desserts in a five course tasting menu. I'm sure this will change to cheese at some stage. Only 3 days open so it's incredibly impressive what they have served and the service was outstanding too.
This is a tumbo sorbet and sugar cane done in a meringue/ mousse and crystallised.
Tumbo is also called banana passion fruit. Tastes like passion fruit looks more oblong like a green banana.
This dessert was way too sweet for me but I loved the sorbet and the presentation on slate.
