The oak barrels are no longer used for the champagne process. The champagne for a number of years was blended in cement vats with ceramic tile lining but now this has all changed to stainless steel vats as they are easier to keep clean, no residues are left in them either chemical or other residues and the temperatures can be kept constant for the process.
