The Caves
The caves themselves are a work of art, this one is referred to as the Champs Elise by the Mumm workers. It looks hugely long but is around 400 metres and is part of the 25 kilometres of caves dug under the GH Mumm Champagne house. The caves are on many levels underground and were cut from the chalk stone under Reims by hand over the centuries so a huge engineering feat by very skilled miners all for the storing of wines with intent of keeping them both in the dark and at a constant temperature both summer and winter.
