Buon Giorno! Its Thursday morning here in lovely Florence…I am sitting in my first class of the day, waiting for it to start. Last night I got to experience something very different. A group of about 15 of us took a bus to the hills of Tuscany, to a little town outside of Lucca, to be exact. When we got to a certain point, we had to switch into a tiny van, because the bus would not fit up the tiny mountainous dirt paths we needed to travel to. The ride up the mountain was very scary being that the gravel path was only about 4 feet wide…We all thought we were done for…haha. When we got to the top, there was the absolute cutest farm house! It was so beautiful with terra cotta and red accents, and the view was spectacular! So we got there washed our hands, put on our aprons and started cooking a homemade four coarse Italian meal. We started making tiramisu (sp?). We each made our own, but had to wait until the end of the night to eat it! We were so hungry! Then we started making faro salad…I was not a fan of this in the end. It had vegetables and some kind of ancient type of wheat…After that we stuffed female zucchini flowers with homemade ricotta cheese. We then rolled veal cutlets with sage, cheese, and asparagus and topped them with a basil leaf. After the veal, we made homemade gnocchi! They had boiled potatoes before hand, but we peeled them, mashed them and rolled them into long slinky like strips. Then we cut them into bite size gnocchi, boiled, steamed and doused them with a four-cheese sauce, which we made earlier. For a snack, we had beer battered sage leaves…I tried them, but was not too keen on the taste…We also made provolone cheese bowls for the salad. My favorite part of the meal, besides the gnocchi, was the green beans with cinnamon. SOOO GOOOD! Overall, the experience was awesome. I worked hard in the kitchen and it paid off with a great meal!
