The characters do in fact mean 'saliva chicken', but presumably the dish is named after the fact that it makes you salivate and not its key ingredients. Seen in 成都美食, a Sichuanese place near my flat (not the one with the aggressively non-committal hygiene rating, that's 重庆美食)
