These are storage areas, probably originally covered. The clay vessels, called pithoi, are as tall as men, and probably contained grain, wine or oil. When filled, they were too heavy to move. When the pithoi began to empty of oil, the oil near the bottom was made reachable by pouring water into the vessel. The oil would rise to the top, and the servants could reach it.
