Here as requested is my list of HK essentials (certainly not exhaustive and in no particular order):
- Peak Tram (at night)
- Stanley market
- Wan Chai - one of the best areas for food and drink
- Star Ferry
- Jetfoil to Macau
- Ocean Park
- Street markets in Central
- Happy Valley race course (I suspect you've already got that one down!)
- Stubbs Road lookout (at night) - great views over the harbour skyline
I'll add more as I think of them.
