In a small village, the proprietor, Monsieur Claveu- sat our large table with a smile. It was perhaps 10pm which was the first strange new habit we had to adapt to in this part of the world. Local foods and local wines. That is what we do wherever we are, in Texas or across the world, supporting slow food movement with the fresh produce that is seasonally available. We are determined to find the local cheese maker and buy from him. It is our nature. We started our first meal with the pledge to go local or go hungry. We have bent that pledge a couple of times, but always in our heart we would have stayed true if we could have. Monsieur Claveu served us a beautiful local wine which led us directly where we wanted to go.
