Apparently if you get lonely in Chiang Mai, just take a cooking class. 5 of the 7 students were Canadian...yes we always find each other.
I got picked up in a tuk tuk bus with the clan of Canadians and head off to Siam Rice cooking school. It was amazing!!!
We got to each pick 5 dishes to make- a soup, a noodle dish, a stir fry, make our own curry paste and make a curry from our own paste. I chose hot and creamy soup, a glass noodle dish, khao soi curry and fried ginger and chicken stir fry. Our instructor Sim was so much fun. He loves to cook, has some mad knife skills and an amazing sense of humour. He insists that to make good Thai food you must move your hips, put some dance in your food. It made for an amusing class. We chopped, minced, mixed, stirred and ground our own paste in a mortar and pestle. The class was 5+ hours long but it flew by! It was so much fun and ended with us tasting our own food. I had made so many dishes that I ate dinner, brought Jana a huge dinner and we still had left overs! Jana claimed the khao soi curry was the best food of the whole trip! So proud!!! It's a very traditional Northern Thai dish that I'd never had before so that made it extra special. The class was held outdoors and we all stood side by side around a big gas stove with a spot for each wok.
I am bringing home a recipe book with all the recipes offered in class so I have a guide to make more at home. Who's coming over for Thai food?
I went to sleep for my last night in Chiang Mai an accomplished girl!
I even got some local spices at the market to bring back.
