We've gone up to the Gold Coast - based at Surfer's Paradise in Queensland. Our hotel (the Vibe) is lush - the breakfasts are quality (though 3 days in I'm struggling with a full buffet English each morning) The pool here is nice and the Jacuzzi is really violently bubbly.
